Hummus

Hummus is a great thing to have in you fridge for a snack or a lunch.  Its also a good use of all of the chickpeas you made.  Hummus is pretty easy to make, lasts in the fridge for a while, and tastes even better than store bought hummus.

The recipe makes about one 1/2 quart of hummus

Ingredients

1 half quart container of chickpeas
1/4 cup of olive oil
2 teaspoons of lemon juice lemon juice
3 cloves of garlic
1 tsp salt
ground pepper to taste

Preheat the oven to 400 degrees.  In a small oven-safe dish add 3 cloves of garlic with the skin on and drizzle with olive oil.  Roast in the oven until browned.  Let cool and then remove skin.

In a blender add all of the ingredients and blend on high.  If the hummus seems too thick add in extra olive oil.

Its great with home-made bread, home-made tortillas, and veggies.  I have attached some easy tortilla and bread recipes below.
